6 super simple recipes for Freshers

Moving away from home is hard enough as it is, but paired with a lack of cooking skills? That’s not great.

BUT it doesn’t have to be that way.

There are some easy meals that every university students should be able to master whether you're living in catered or self-catered halls. It's good to have some cheap options under your belt and if they're suitable for meal prep, they're even better!

Here are 6 student meals that you can't really go wrong with...

1. Chicken Ceasar salad

Let’s start with something that nobody can mess up. It doesn’t even require any cooking, especially if you cheat and buy cooked chicken from the supermarket.

What do I need?

  • Lettuce
  • Cucumber
  • Tomato
  • Croutons
  • Chicken Ceasar dressing

2. Curry

For a hot and tasty meal, you need to master this classic. It'll work with any meat or vegetables and ideal to make as a meal prep option. It's foolproof - especially if you cheat and use a sauce from a jar.

What do I need?

  • Chicken
  • Vegetables (baby corn, green beans, carrots, onions)
  • Jar of sauce
  • Rice

3. Spaghetti bolognese

This is another firm student favorite because it's just so simple. Mince can sometimes be expensive but you could opt for Quorn or turkey instead and you won't even taste the difference.

What do I need?

  • Dry spaghetti
  • Mince (beef, turkey or Quorn)
  • Onion
  • Garlic
  • Chopped tomatoes
  • Basil
  • Optional: Cheese

4. 'Mac & Cheese'

Or spaghetti and cheese as I like to call it! It's probably worth investing in small pasta if you're making a big batch though. This is another low-skill meal that tastes SO good. 

What do I need?

  • Butter 
  • Flour
  • Cheddar cheese
  • Parmesan
  • Milk
  • Garlic
  • OR just use cheese sauce powder!

5. Fish & Rice

If you’re feeling a bit fancier, opt for fish instead. You can cook the fish by boiling it in a bag (the easy way) and then serve with rice and your favourite veggies.

Shopping list:

  • Cod in parsley sauce
  • Rice
  • Peas & sweetcorn (or your fave vegetables)

6. Chicken wraps / Enchiladas

Both of these are such a great student shout. You can even have the wraps with some oven chips, or if you’re feeling extra fancy, you can upgrade the wraps to enchiladas with tomato sauce and grated cheese.

What do I need? 

  • Wraps
  • Chicken
  • Lettuce
  • Tomato
  • Cheese
  • Passata (for enchiladas)
